Xanthan Gum, also known as Han Sheng Gum, is a microbial extracellular polysaccharide produced by the fermentation of carbohydrates by the bacterium Xanthomonas campestris. It appears as a white or light yellow free-flowing powder. It is a highly efficient biopolymer that dissolves readily in water to form a stable, high-viscosity solution with unique pseudoplastic rheology (shear-thinning behavior). Its solution exhibits high stability against heat, acid, alkali, and salt. As an excellent thickener, suspending agent, and stabilizer, xanthan gum finds widespread applications in over 20 industries including food, petroleum, pharmaceuticals, and daily chemicals.
